Tis the season to create a beautiful Keto Gingerbread House! We used a homemade Keto gingerbread cookies and our delicious Cream Cheese Butter Frosting to build a festive Winter scene to display all season, we hope you enjoy building yours, too!

2 cups almond flour
1 teaspoon baking powder
¼ teaspoon xanthan gum
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 teaspoon ground ginger
1 tablespoon ground cinnamon
1/8 teaspoon sea salt
4 tablespoons butter, softened
1/3 cup Swerve brown sugar, packed
1 large egg
1 teaspoon vanilla extract
Cream Cheese Butter Frosting:
12 tablespoons butter
3 tablespoons heavy whipping cream
3 teaspoons pure vanilla extract
2 cups Swerve confectioners’ sugar replacement
Pulse all gingerbread ingredients together in a food processor until fully combined.
With your hands, form into ball and wrap in parchment paper. Stick in the fridge for at least 2 hours to allow the dough to become cold and firm.
Preheat your oven to 375 degrees Fahrenheit.
Remove from the fridge, unwrap, and roll out on a large cutting board. With a sharp knife, cut into gingerbread house sections:
- 1 square as your base
- 2 triangles as your front and back sides of the house
- 2 rectangles as your roof
- One small rectangle as your chimney
Set on a baking tray lined with parchment paper with at least a couple of inches in between each cookie.
Bake in the oven for 10-12 minutes, or until cookies have set and are firm to touch.
While cookies are baking, prepare your frosting by blending until very creamy in a food processor or with a hand mixer. If using food coloring, divide frosting into bowls with as many colors as you are using and add color drops to each bowl and stir well until your desired color is created.
Remove cookies from the oven. They will be very delicate until they have cooled completely.
When completely cool frost and garnish with any Keto-friendly sprinkles and additional decorations and use frosting to assemble and secure into your gingerbread house.
