1 pound of fresh carrots, washed
2 tablespoons butter or ghee, melted
2 tablespoons olive or avocado oil
2 tablespoons sugar-free maple syrup
1 teaspoon sea salt
½ teaspoon black pepper
Zest from ½ fresh lemon
½ teaspoon smoked paprika
Garnish: Fresh thyme sprigs
Preheat your oven to 400 degrees Fahrenheit.
Arrange washed carrots on a baking tray lined with parchment paper. Drizzle melted butter or ghee and olive or avocado oil on the carrots.
Drizzle sugar-free maple syrup on the carrots.
Season with sea salt, black pepper, smoked paprika and lemon zest.
Roast in the oven for 35 minutes, tossing with a spatula after 15 minutes.
Remove from the oven and garnish with fresh thyme.
Serve between 4, storing any leftovers in the fridge for up to 5 days.
