2 large eggs
1 cup frozen spinach
1 tablespoon ghee or butter
½ teaspoon sea salt
½ teaspoon black pepper
½ medium avocado, peeled & diced
½ whole scallion, minced
Crack eggs into a blender and add frozen spinach, sea salt and black pepper.
Blend until the eggs are completely green.
Heat ghee or butter in a skillet set to medium-low heat.
Add green egg mixture and scramble until done to your liking.
Remove from heat and serve with diced avocado and minced scallion.
