Keto-Lemon Streusel Muffins (RK Product)

These lemon muffins are topped with a perfectly sweet and delicately crunchy lemon streusel topping, packed with healthy fats found in our Lemon Twist Lean for Life Powder. Enjoy one of these with your coffee or after a workout!

1 ¼ cups almond flour
1 packet of Real Ketones Lemon Shift
¼ cup Keto granulated sweetener such as allulose
½ teaspoon baking soda
⅛ teaspoon sea salt
1 ½ large eggs, beaten
½ cup 2% plain Greek yogurt
1 teaspoon pure vanilla extract
Zest from 1 medium lemon
Streusel Topping:
Zest from 1 medium lemon
3 tablespoons almond flour
1 tablespoon Keto granulated sweetener such as allulose
1 packet of Real Ketones Lemon Shift


Preheat the oven to 350 F (180 C).

Grease a 6 slot muffin tin or line it with silicone or parchment muffin liners and set aside.

Combine the muffin wet ingredients in one bowl and the dry ingredients in another. Make sure that both bowls are thoroughly mixed, then combine them in one bowl until very well-combined.

Mix the streusel ingredients in a small bowl and top each muffin, a spoonful at a time, gently pushing in the topping equally on each muffin.

Pour into the muffin liners and bake for 18-20 minutes or until golden in color. Remove from the oven and allow to cool for a few minutes.

Serving between 6, storing any leftovers in an airtight container in the fridge for up to 1 week.
