Ingredients:
½ cup heavy whipping cream
½ cup Keto confectioners’ sugar
1 teaspoon pure vanilla extract
Pinch of fine sea salt
1 teaspoon xanthan gum
Instructions:
Add all ingredients except xanthan gum to a large bowl and whisk with an electric mixer set to high-speed until thick and stiff peaks have formed, about 2-3 minutes.
Sprinkle xanthan gum over the cream and whisk again until it is well-combined and the cream is even thicker, resembling marshmallow fluff.
Serve between 16, storing any leftovers in an airtight container on the countertop for 5 days.
