2 cups fresh basil leaves
½ cup pine nuts
½ cup grated parmesan cheese
1 small garlic clove, peeled & minced
1 teaspoon sea salt
½ teaspoon black pepper
2 tablespoons fresh lemon juice
2/3 cup olive oil
Add all ingredients except olive oil to a food processor and pulse until minced very well. Slowly pour in olive oil and keep pulsing until creamy.
Transfer to a glass jar and seal until ready to serve.
Serve with Keto crackers, veggies, meats and scrambles, storing any leftovers in the fridge for up to 2 weeks.
