Cooking Time: 1 hour to chill in the freezer
8 tablespoons plain cream cheese
4 tablespoons almond flour
¼ teaspoon sea salt
¼ teaspoon vanilla bean powder
1/3 cup xylitol or another low-carb sweetener
1 cup pistachios, chopped
Combine all ingredients except pistachios in a food processor and pulse until everything is creamy and well combined.
Using a spoon, scoop tablespoons of the cream cheese mixture and form into a ball with the palms of your hands.
Roll in chopped pistachios and arrange on a plate. Chill in the fridge until ready to serve.
