Keto Pork Sausage & Olive Stir-Fry

Serves 4

Ground pork is seasoned with traditional sausage-inspired spices and tossed in heart-healthy coconut crème to make this stir-fry extra satisfying. Cherry tomatoes and green olives add an unexpected pop of flavor to this meal that can be had for breakfast, lunch or dinner.

1 tablespoon ghee or butter
1 pound of ground pork
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon dried fennel seeds
1 teaspoon smoked paprika
1 teaspoon dried oregano
2 tablespoons canned coconut crème
2 cups baby spinach
10 cherry tomatoes, halved
10 green olives, pitted


Add ghee or butter to a cast-iron skillet set to medium-low heat.

Add ground pork and break up with a metal spatula. Season with sea salt, black pepper, garlic powder, fennel seeds, smoked paprika and dried oregano and allow to brown in the skillet, about 10 minutes.

When the pork is browned, stir in coconut crème and baby spinach (without draining the excess grease). Top with cherry tomatoes and green olives.

Serve between 4, storing any leftovers in the fridge for up to 3 days.
