Keto Pork Shoulder Stew

What’s more comforting that a hearty stew made with melt-in-your-mouth pork shoulder and all your favorite veggies? We love to make a big batch of this to share with loved ones, or to enjoy throughout the week. If you like yours on the spicier side, add a big pinch of cayenne pepper.

Prep Time: 5 minutes
Cooking Time: 45 minutes

1 tablespoon of ghee or butter
1 pound of boneless pork shoulder, diced in 1” cubes
1 yellow onion, peeled and chopped
2 teaspoons sea salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 tablespoon smoked paprika
1 teaspoon chili powder
5 mini bell peppers, seeded and sliced
1 cup broccoli, chopped
1 cup cauliflower, chopped
2 tablespoons tomato paste
2 tablespoons olive oil
1 cup bone broth
Optional Garnishes:
1 whole scallion, minced


Add ghee or butter to a large stock pot and bring to medium high heat.

Add cubed pork shoulder and brown for about a minute on each side.

Reduce heat to low and add remaining ingredients, except scallion.

Simmer on low without a lid until the pork and veggies are tender, about 40 minutes.

Garnish with minced scallion.

Store any leftovers in a glass container in the fridge for 3 days.
