Keto Purple Coleslaw

Summer is the perfect time to make a batch of this creamy coleslaw, made with purple cabbage, radish, herbs and good quality mayonnaise. This is delicious with some smoked brisket or grilled chicken, let us know what you serve this with!

Ingredients:

4 tablespoons mayonnaise
Zest from ½ fresh lemon
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon dried fennel seeds
1 teaspoon dried tarragon
1 whole scallion, minced
¼ cup fresh parsley, minced
4 cups chopped purple cabbage
4 medium radishes, minced

Instructions:

Mix all ingredients except cabbage in a large bowl until very well combined.

Gently fold in shredded cabbage until it is coated by the mayonnaise mixture.

Store any leftovers in the fridge for up to 7 days.
