Ingredients:
4 prepared burger patties
4 ounces of extra-sharp cheddar cheese
Yellow mustard
4 cups mixed lettuce
4 tablespoons olive oil
1 cup jarred roasted bell peppers
Instructions:
Heat a cast-iron skillet to medium-high heat and when hot, arrange patties in the skillet, not moving once set, and sear until golden, about 5 minutes per side. When nearly done, top with an ounce of sliced cheese each and place a lid on the skillet so that the cheese melts. Turn off the heat from the stove.
Arrange mixed lettuce leaves on 4 plates and drizzle 1 tablespoon of olive oil over each pile of greens. Layer each with roasted bell peppers, a cheesy burger and garnish with yellow mustard, storing any leftovers in the fridge for up to 3 days.
