These rainbow-threaded veggie skewers are perfect to feast on this Summer! You can grill these outdoors or inside on a grill pan!

Ingredients:
6 wooden skewers
4 tablespoons olive oil
1 tablespoon raw apple cider vinegar
1 teaspoon sea salt
½ teaspoon black pepper
1 red bell pepper, seeded & chopped in 1x1” squares
12 cherry tomatoes
1 orange bell pepper, seeded & chopped in 1x1” squares
1 yellow bell pepper, seeded & chopped in 1x1” squares
1 medium green zucchini, ends removed & sliced in ½” rounds
1 small red onion, peeled & sliced in quarters
Instructions:
Soak the wooden skewers in water for a few minutes so that they do not burn when you place them on the grill.
Whisk olive oil, raw apple cider vinegar, sea salt and black pepper in a large mixing bowl until well-combined.
Add chopped and sliced veggies and toss well in the vinaigrette.
Thread each skewer in a rainbow-color order: red, orange, yellow, green, purple. If you have full-size skewers, you can do two rounds of rainbows.
Place on the hot grill for a couple of minutes per side, or until soft and charred.
Remove from the grill and arrange on a serving platter.
Serve immediately.
