Keto Ranch & Pork Poppers

Serves 4

These tasty peppers are stuffed with seasoned ground pork and ranch dressing, yum! These taste great as a little snack or appetizer, whip up a batch soon, we know you’ll love how easy they are to prepare, and, oh, very delicious!

Cooking Time: 20 minutes


8 mini-peppers, sliced in half & seeded
4 ounces of cooked ground pork
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon dried fennel seeds
4 tablespoons bottled ranch dressing
1 medium whole scallion, minced
1 tablespoon fresh parsley, minced


Preheat your oven to 400 degrees Fahrenheit.

Arrange halved peppers on a cast-iron skillet and bake in the oven until the peppers are soft and blackened, about 15 minutes.

While peppers are baking, toss cooked ground pork in sea salt, black pepper, garlic powder, fennel seeds and ranch dressing until well-combined.

Remove peppers from the oven and fill with seasoned ground pork.

Garnish with scallion and parsley, storing any leftovers in the fridge for up to 3 days.
