Keto Roasted Artichoke Hearts

You’re going to love how fast and easy this recipe for Roasted Artichoke Hearts is, thanks to using frozen artichoke hearts and prepared mayonnaise, just a couple of staple ingredients we keep on hand around here. For an even faster prep, use a chipotle flavored mayonnaise, and store your frozen artichoke in the fridge before you know you’re going to make this!

Cooking Time: 30 minutes

Ingredients:

Artichoke Hearts:
2 tablespoons avocado oil
2 cups frozen artichoke hearts
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon garlic powder
2 teaspoons capers
Zest from ½ fresh lemon
2 tablespoons fresh parsley, minced
Sauce:
1 tablespoon warm bacon grease
4 tablespoons mayonnaise
1 teaspoon sea salt
½ teaspoon garlic powder
1 teaspoon hot sauce
1 teaspoon chili pepper
1 whole scallion, minced

Instructions:

Preheat your oven to 400 degrees Fahrenheit.

Remove artichoke hearts from the freezer and allow to defrost a bit on the countertop, about 10 minutes.

Place in a skillet with avocado oil and toss with sea salt, black pepper and garlic powder.

Roast in the oven for about 20 minutes, tossing after 10 minutes.

While artichoke hearts are roasting, mix all sauce ingredients together except half of the minced scallion and place in a small ramekin. Top with the remaining half of the minced scallion.

Remove from the oven (artichoke hearts should have browned a bit) and toss with capers, lemon zest and parsley.

Serve between 4 with sauce, storing any leftovers in the fridge for up to 3 days.
