This recipe for chocolate salted caramel cups is such a decadent treat and fit into your health and wellness goals which is two wins for us! We like keeping a batch of these in the fridge for any time we need a little something sweet!
Prep Time: 15 minutes
Cooking Time: 10 minutes & 30 minutes to freeze
Ingredients:
Chocolate:
1 cup stevia-sweetened chocolate chips
Salted Caramel:
4 ounces butter
1 cup heavy whipping cream
2 tablespoons plain cream cheese
2 tablespoons (Any sugar free sweetener of your choice)
½ teaspoon pure vanilla extract
1 teaspoon caramel extract
1 teaspoon sea salt
Garnish:
2 tablespoons stevia-sweetened chocolate chips, melted
Sea salt
Instructions:
Line a muffin tin with 9 silicone muffin liners.
Using a double broiler, or a glass bowl set over a small saucepan, carefully melt chocolate chips, or microwave in a glass bowl on 30-second intervals, stirring in between intervals.
Place 1 tablespoon of the melted chocolate mixture into each lined muffin cup and with your finger or the back of a spoon, spread upwards in the silicone liner so that you create a thin side crust on each cup.
Freeze for at least 10 minutes.
While chocolate is freezing, add all of the salted caramel ingredients to a saucepan set to low heat and simmer until it is thick and bubbly, about 10 minutes.
Fill each chocolate cup with the salted caramel filling and flatten with a back of a spoon.
Freeze for at least 10 minutes.
Remove from the freezer and garnish with optional melted chocolate and sea salt, freezing for 10 more minutes.
Store in a glass container in the fridge for 1-2 weeks.
