Keto Sausage & Peppers Endive Boats

What’s fancier than this recipe for sausage, peppers and bacon arranged on endive leaves? Easy enough to prep for lunch any old day and perfect to put together to bring to a party, we know you’re going to love this dish!

Prep Time: 5 minutes
Cooking Time: 10 minutes to steam spinach, grill sausage & char peppers

2 tablespoons mayonnaise
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon apple cider vinegar
3 endive leaves
1 pork Italian sausage link, chopped
2 slices of bacon, minced
6 mini bell peppers, charred or raw, chopped
½ whole scallion, chopped


If using uncooked sausage links, grill one sausage link until heated through, about 10 minutes. While it is cooking, fry the bacon in a skillet set to medium heat until it is crispy, about 8 minutes. If charring peppers, place on a baking sheet and roast under the broiler until they begin to blister, about 5 minutes per side.

Mix the mayonnaise with the sea salt, black pepper, garlic powder and apple cider vinegar in a bowl until it is well combined and set aside.

Arrange the cooked sausage, bacon, bell peppers, minced bacon, chopped peppers and scallion on top of each endive leaf. Top each leaf with a dollop of the mayonnaise mix.
