Keto Skillet Fried Eggs

Serves 3

Eggs fried in the cast-iron have never tasted better than this batch of Skillet Fried Eggs. Cooked in bacon grease and garnished with melty cheese and scallion, we think this is going to be on the regular rotation in your home! If you don’t have a cast-iron, don’t skip this recipe! A non-stick or traditional metal skillet will do the trick!

Prep Time: 5 minutes
Cooking Time: 15 minutes

Ingredients:

3 slices of bacon
1 tablespoon bacon grease
3 large eggs
3 slices of extra-sharp cheddar cheese, cut in small pieces
1 teaspoon sea salt
½ teaspoon black pepper
1 whole scallion, minced

Instructions:

Fry bacon in a cast-iron skillet set to medium heat until crispy, about 10 minutes. Set aside and slice in bite-sized pieces, keeping about a tablespoon of bacon grease on the pan.

Crack eggs directly onto the pan and season with sea salt and black pepper. Fry, without flipping, until the egg whites have set, about 3 minutes. About halfway through, sprinkle small pieces of cheese all over the eggs and allow to melt and bubble a bit.

Turn off the heat from the stove and cover with a lid until all of the cheese is completely melted.

Garnish with minced scallion.

Store any leftovers in the fridge for up to 3 days.
