This creamy treat is so simple to prepare, we like to make this for a holiday gathering, as this dish can be made in advance and stored in the fridge until ready to serve.

1 cup heavy whipping cream
2 ½ cups plain cream cheese
3 large eggs
2/3 cup erythritol
2 teaspoons almond flour
Preheat your oven to 400 degrees Fahrenheit.
Place all ingredients in a blender and blend until very creamy.
Line an 8” round baking dish with parchment paper. Pour cheesecake batter into the pan and smooth with a baker’s spatula so that it is distributed evenly.
Bake in the oven for 25-30 minutes.
Remove from the oven and allow to cool for a few hours before serving.
Store any leftovers in a glass container for up to 5 days.
