We’ve been loving crisp Swiss chard in our salads, but if you can’t find any, swap it for spinach, kale or your favorite leafy green. This salad is bursting with flavor, texture and healthy fats, it’s amazing as a small meal or as a hearty side dish!

Cooking Time: 10 minutes
2 slices of bacon, chopped in small pieces
6 mini bell peppers, seeded & chopped
1 teaspoon sea salt
½ teaspoon black pepper
¼ cup chopped pecans
4 cups Swiss chard, veins removed & chopped
1 medium avocado, peeled & sliced
Garnish: Fresh lime juice
Place chopped bacon in a skillet and cook on medium heat until crispy, about 5 minutes. Set aside, keeping the bacon grease in the skillet.
Add chopped peppers to the skillet and sauté with sea salt and pepper until the peppers are soft, about 5 minutes.
Turn the heat off and stir in chopped pecans.
Serve over 2 cups of chopped Swiss chard and garnish with ½ of an avocado and a squeeze of fresh lime juice.
Store any leftovers in a glass container in the fridge for up to 3 days.
