Keto Tarragon Chicken Salad

Leftover chicken breast is the star in this salad that takes just a few minutes to prepare. Dried tarragon and walnuts add an earthy flavor that pairs wonderfully with the tang from the seasoned mayonnaise and bright fresh parsley. If you can’t source micro greens, swap in any leafy veggie, such as romaine, baby kale or spinach.

2 tablespoons mayonnaise
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon dried tarragon
4 ounces of leftover boneless & skinless chicken breast, chopped
1 cup of micro greens
½ cup celery, diced
1 cup of micro greens
¼ cup parsley, minced
1 ounce chopped walnuts


Mix the mayonnaise, sea salt, black pepper, garlic powder and tarragon in a bowl until it is well combined.

Gently mix in the chopped chicken breast, micro greens, diced celery, minced parsley and chopped walnuts.
