Keto Tuna Salad with Red Pepper

When you want to put together a super tasty meal in just a few minutes, tuna salad is there for you! We jazzed ours up with some diced red pepper and capers. Opt for the highest quality mayonnaise you can find, such as brands that use real eggs and olive or avocado oil in their ingredients, it will really take your salad up a notch!

1 5-ounce can of tuna packed in water, drained
2 tablespoons mayonnaise
1 tablespoon yellow mustard
¼ red bell pepper, seeded and diced
1 teaspoon capers
1 whole scallion, minced
½ teaspoon sea salt
¼ teaspoon black pepper


Gently toss all ingredients together in a bowl and serve between two over baby kale and sliced cucumbers, storing any leftovers in the fridge for up to 3 days.
