Keto Veggie & Bacon Grease Stir-Fry

Serves 2

Save your bacon grease for dishes such as this veggie stir-fry! Cooking with some increases the fats in the nutrition and your body will thank you as it feels steady and satisfied in-between meals. We used onion, broccoli and red bell pepper in this one, but mix it up and use any low-carb veggies you have on hand.

Prep Time: 5 minutes
Cooking Time: 15 minutes

Ingredients:

1 tablespoon butter or ghee
½ medium red onion, diced
2 medium garlic cloves, peeled & minced
½ medium red bell pepper, cored & sliced
2 cups broccoli crowns
1 teaspoon sea salt
½ teaspoon black pepper
2 tablespoons bacon grease


Instructions:

Add ghee or butter to a large skillet and bring to medium-low heat.

Add red onion and garlic and sauté until soft, about 5 minutes.

Add red bell pepper and sauté until soft, another 3 minutes or so.

Add broccoli crowns and continue sautéing until soft, about 5 minutes.

Stir in bacon grease and turn off the heat.

Serve between 2, storing any leftovers in the fridge for up to 5 days.
