Keto Watermelon & Rose Layered Cake

Ingredients:
Watermelon:
1 cup fresh watermelon
1 tablespoons rose water
1 packet of Real Ketones Watermelon D-BHB Powder
Almond Dacquoise:
1 cup almond meal
⅔ cup keto confectioners’ sugar
3 large egg whites
½ cup keto confectioners’ sugar
Rose Cream:
1 cup of heavy whipping cream
2 teaspoons pure vanilla extract
2 tablespoons Keto granulated sweetener (Any sugar free sweetener of your choice)
1 tablespoon rose water
Garnishes:
1 cup fresh strawberries, tops removed & sliced
Dried rosebuds
Chopped pistachios
Instructions:
Preheat your oven to 400 F (178 C).
Place the watermelon in a bowl and sprinkle with rose water and the Real Ketones Watermelon D-BHB powder. Stir until the watermelon absorbs it and set aside.
Prepare the almond dacquoise by stirring the almond flour and keto confectioners’ sugar in a bowl and set aside. Whisk the egg whites in a stand-mixer until stiff, about 3-5 minutes. Gently combine the egg mixture into the almond flour mixture. Pour into a 8x8” baking tin lined with parchment paper and bake in the oven for 10-15 minutes, or until a light golden brown color. Remove from the oven and let it cool completely, then break it into 2” pieces with your hands.
Prepare the rose cream by whipping all of the rose cream ingredients in a stand mixer until stiff peaks have formed, about 2-3 minutes.
Assemble your cake by creating a layer of rose watermelon, almond dacquoise pieces, rose cream, sliced strawberries, dried rosebuds and chopped pistachios. Let it cool in the fridge for 1 hour prior to serving.
Serve between 12, storing any leftovers in an airtight container for up to 3 days.
