A batch of cauliflower whipped with creamy, tangy goat cheese and bright, fresh herbs is just the ticket to a delicious Keto side dish. We love this served up with a hot slice of Beef & Pork Meatloaf, it’s also super tasty served with some fried eggs for breakfast the next day!

Ingredients:
Whipped Cauliflower:
1 tablespoon ghee or butter
4 cups cauliflower rice
1 clove of garlic, peeled & minced
1 teaspoon sea salt
½ teaspoon black pepper
4 ounces of goat cheese
1 whole scallion, minced
¼ cup fresh parsley
Garnishes:
4 tablespoons olive oil or butter
Minced scallion
Instructions:
Heat ghee or butter in a large skillet on medium heat. Add cauliflower rice, minced garlic, sea salt and pepper and sauté until soft, about 5 minutes.
Transfer to a blender or food processor and add goat cheese, scallion and parsley.
Blend on high until everything is creamy and well-combined.
Serve with a tablespoon of olive oil or butter and a little minced scallion.
Store any leftovers in a glass container in the fridge for 5 days.
