Lemon Chia Seed Pudding (RK Product)

This treat is both Keto and Vegan, it’s a delicious recipe to enjoy when you crave something sweet and healthy!

Ingredients:
Lemon Cream Layer:
1 cup raw cashews, soaked in 2 cups hot water for 4 hours
1 cup plain & unsweetened almond milk
2 packets of Real Ketones Lemon Twist Lean for Life powder
Pinch of fine sea salt
Zest from ½ lemon
2 tablespoons fresh lemon juice
Chia Seed Layer:
6 tablespoons chia seeds
1 cup + 2 tablespoons plain & unsweetened almond milk
Zest from ½ lemon
Pinch of fine sea salt
Optional Garnish:
Fresh lemon slices, seeds removed

Instructions:

Prepare the Lemon Cream Layer by blending the soaked cashews with the almond milk, Real Ketones Lemon Twist Lean for Life powder, fine sea salt, lemon zest, and lemon juice on high speed until very creamy.

While the cashews are soaking, prepare the Chia Seed Layer by adding all ingredients to a bowl and mixing well. Let it sit on the counter top for about 1 hour. It will gelatinize during this time and become very thick.

Pour the Chia Seed Layer evenly into 6 6-ounce jars. Top with the Lemon Cream Layer. Garnish with optional fresh lemon slices.

Serve between 4, storing any leftovers sealed in the fridge for up to 1 week.
