Lemon Chicken Soup

Serves 4

Ingredients:

2 tablespoons of ghee
1 yellow onion, peeled and diced
2 medium stalks of celery, diced
4 ounces of boneless & skinless chicken thighs, diced
3 cups chicken stock
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
2 cups of riced cauliflower
1 packet of Real Ketones Lemon Twist Powder
1 whole scallion, minced
¼ cup fresh parsley, minced
¼ cup fresh cilantro, minced

Instructions:

Heat ghee in a skillet set to medium-low heat. Add onions and sauté until soft, about 5 minutes. Add celery and continue to sauté another 5 minutes.

Add the remaining ingredients except the packet of Real Ketones Lemon Twist Powder, scallion, parsley and cilantro and continue to sauté with a lid on until the chicken is cooked through and the cauliflower rice is soft, about 10 minutes.

Remove from the heat and stir in the packet of Real Ketones Lemon Twist Powder, scallion, parsley and cilantro.

Serve between four, storing any leftovers in the fridge for up to 3 days.
