The bright flavor of lemon shines in this recipe for Lemon Coconut Bars, with fresh lemon juice and our specially formulated Keto Lean for Life powder.

1 ½ cups almond flour
½ cup Keto confectioners’ sugar
¾ cup cold unsalted butter, diced in small cubes
4 large eggs
1 cup Keto granulated sugar such as monk fruit
2 packets of Real Ketones Lemon Twist Keto Lean for Life powder
¼ cup fresh lemon juice
1 teaspoon baking powder
¾ cup dried & unsweetened shredded coconut
Preheat the oven to 350 F (180 C).
Add the almond flour, Keto confectioners’ sugar and cold butter to the bowl of a food processor and pulse until well-combined and crumbly.
Press into a 9x13” baking tray lined with parchment paper. Bake in the oven for 15 minutes.
While the crust is baking, prepare the filling. Mix the eggs, Keto granulated sugar, Real Ketones Lemon Twist Keto Lean for Life powder, lemon juice and baking powder together until it is well-combined and creamy.
Pour the filling on top of the baked crust and spread it evenly with a baker’s spatula.
Return to the oven and bake for 10 minutes. Remove from the oven and sprinkle the dried coconut over the top in an even layer. Return to the oven and bake for 10 more minutes. Remove and let cool before slicing in 20 squares.
Store any leftovers in an airtight container for up to 1 week.
