Loaded Cauliflower

This Loaded Cauliflower dish is going to have you and your guests digging in and enjoying the warm creamy comfort food that find in eating Keto! Cauliflower is it’s smoothest blended with cream cheese, shredded cheese and heavy cream, we’ll be surprised if this doesn’t become one of your new favorites!

Prep Time: 10 minutes
Cooking Time: 25 minutes

Ingredients:
2 slices of bacon, chopped
1 tablespoons butter
4 cups cauliflower florets
3 garlic cloves, peeled & minced
1 teaspoon sea salt
½ teaspoon black pepper
Pinch of ground nutmeg
4 tablespoons plain cream cheese
½ cup shredded cheddar cheese
½ whole scallion, minced
Topping:
½ cup shredded cheddar cheese
½ whole scallion, minced

Instructions:

Preheat your oven to 400 degrees Fahrenheit.

Add chopped bacon to a skillet and bring to medium-low heat. Cook bacon until done to your desired crispiness, or about 5 minutes. When done, remove from the skillet with a slotted spoon and set aside, reserving the bacon grease in the skillet.

Add butter to the skillet and bring to medium-low heat.

Add cauliflower and minced garlic and season with sea salt, black pepper and ground nutmeg and sauté until it softens, about 5 minutes.

When soft, remove from the stove and transfer to a blender. Add the cream cheese, heavy cream, shredded cheese and ½ minced scallion and blend until very creamy.

Pour into an oven-safe casserole dish or shallow bowl.

Sprinkle with remaining ½ cup shredded cheese.

Bake in the oven for 10 minutes, or until the cheese is bubbly.

Remove from the oven and serve between 4, garnishing with chopped bacon and minced scallion and storing any leftovers in an airtight container in the fridge for up to 3 days.
