Low Carb Strawberry Cinnamon Rolls

We love cinnamon rolls fresh out of the oven so this weekend we are making a fresh batch of these Low Carb Strawberry Cinnamon Rolls to share with our loved ones! Just a few fresh or frozen strawberries transforms classic icing into a sweet, pink icing with antioxidants, Vitamin C and fiber! 

 

Prep Time: 30 minutes

Cooking Time: 20 minutes

 

Ingredients:

Dough:

3 cups almond flour

3 tablespoons arrowroot powder

¼ teaspoon baking soda

½ teaspoon sea salt

¼ cup brown (Any sugar free sweetener of your choice)

2 large eggs

¼ cup coconut oil, melted

1 teaspoon pure vanilla extract

¼ cup brown (Any sugar free sweetener of your choice)

2 tablespoons ground cinnamon

Strawberry Cream Cheese Frosting:

2 tablespoons butter, melted

4 tablespoons plain cream cheese

¼ cup fresh or frozen strawberries, heated in the microwave, drained & crushed with the back of a fork  

 

Instructions:

 

Whisk dry dough ingredients in one bowl and wet dough ingredients in another.  Gently combine in one large bowl.

 

Allow to cool in the fridge for 15 minutes.

 

Place dough in between 2 large pieces of parchment paper using extra almond flour on the bottom and top of the dough so that it’s easy and not sticky to work with and flatten into a 10x10” square with a rolling pin or jar.  Remove the top layer of parchment paper so that the dough is exposed.

 

Carefully roll up the dough into a log by folding up the parchment paper carefully and creating a roll.  Do this slowly so that you are using the parchment paper and not your fingers to create a log.

 

Allow to cool for 10 more minutes in the fridge.

 

Preheat your oven to 350 degrees Fahrenheit. 

 

Remove from the fridge and slice into 8 sections and place on a baking tray lined with parchment paper.

 

Bake in the oven for 15-20 minutes, or until the rolls are golden in color.

 

While rolls are baking, prepare your frosting by mixing all frosting ingredients in a bowl.  Warm in a microwave just before using. 

 

Remove cinnamon rolls from the oven when they are firm in texture and golden in color and smother frosting over each roll after they have cooled for a few minutes. 

 

Serve between 8, storing any leftovers in an airtight container in the fridge for up to 3 days.
