Get a big taste of Summer with this Marinated Feta Salad! Crumbled feta cheese and cherry tomatoes are marinated in olive oil and a combination of fresh and dried herbs and is all piled on top of bright baby spinach. This is great just as it is or on top of grilled chicken or in a scramble.

2 tablespoons olive oil
1 teaspoon sea salt
½ teaspoon black pepper
1 tablespoon balsamic vinegar
1 whole scallion, minced
5 fresh basil leaves, minced
1 teaspoon fresh rosemary, minced
1 cup cherry tomatoes, quartered
2 ounces crumbled feta cheese
4 cups baby spinach
Add olive oil, sea salt, black pepper, balsamic vinegar, scallion, basil and rosemary to a mixing bowl and whisk until well-combined.
Gently fold in cherry tomatoes and feta cheese.
Serve between 2, over 2 cups of spinach, each, storing any leftovers in the fridge for up to 5 days.
