We love how simple and quick it is to make this lunch idea. It travels well and can be made a few days in advance. Mix it up with different slices of meats, various cheeses and your favorite olives!

Ingredients:
2 cups baby kale
3 slices of deli turkey, rolled up
2 thin slices of ham, rolled up
5-10 kalamata olives
1 ounce of extra sharp cheddar cheese
1 tablespoon olive oil
1 tablespoon apple cider vinegar
½ teaspoon sea salt
¼ teaspoon black pepper
Instructions:
Arrange baby kale, turkey, ham, cheddar cheese, and olives in a travel container.
Store olive oil, apple cider vinegar, sea salt and black pepper in a small container until ready to eat.
When ready, drizzle the olive oil mixture over everything, chop up and serve.
