When you are craving the deliciousness of a frosted blondie but do not want added sugar, this recipe is to the rescue! Enjoy the flavors of lemon, white chocolate and berries in every bite!

1 cup (2 sticks) unsalted butter, room temperature
¾ cup Keto granulated sweetener, such as monk fruit
1 large egg, room temperature
¼ cup fresh lemon juice
2 ¼ cups almond flour
½ teaspoon baking powder
½ teaspoon fine sea salt
¼ cup Keto white chocolate chips
Mixed Berry Glaze:
½ cup Keto confectioners’ sweetener
1-2 tablespoons heavy whipping cream
1 packet of Real Ketones Caffeinated Mixed Berry powder
Preheat the oven to 350 F (176 C).
Line an 8x8” baking pan with parchment paper.
Cream the butter and Keto granulated sweetener with a hand or electric mixer until well-combined and light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl, and add in the egg and lemon juice, continuing to mix until very well-combined.
Mix the almond flour, baking powder, and sea salt in a separate bowl.
Slowly add the dry ingredients to the wet ingredients until very well-combined. Gently stir in the Keto white chocolate chips.
Pour into the baking pan and pat it down with a spoon or spatula ensuring it is evenly distributed in the pan.
Bake in the oven for 30-35 minutes. While it is baking, prepare the Mixed Berry Glaze by mixing all of the glaze ingredients together until very creamy.
Remove from the oven and allow to cool before frosting it with the Mixed Berry Glaze.
Slice and serve between 12, storing any leftovers in an airtight container on the countertop for up to 5 days.
