Prep Time: 5 minutes
Cooking Time: 0 minutes
1 cup full-fat canned coconut milk
1 packet of unflavored gelatin powder
1 teaspoon pure vanilla extract
3 cups heavy whipping cream
Pinch of sea salt
2 packets of Real Ketones Prime Shift D-BHB Caffeinated Mixed Berry powder
1 cup fresh or frozen mixed berries
Pour coconut milk into a saucepan and sprinkle the top of it with the packet of gelatin powder. Let it sit still for 5-7 minutes.
Place the saucepan on the stove set to medium-low heat. As it heats, whisk the gelatin powder into the milk so that it has completely melted into the coconut milk.
Add the heavy whipping cream, pure vanilla extract, sea salt and Real Ketones Prime Shift D-BHB Caffeinated Mixed Berry powder and whisk for 2-3 minutes, and everything is completely absorbed together and it is very creamy.
Remove from the heat and let cool a few minutes before pouring ¾ full into 6 small ramekins or glass jars. Place in the fridge, covered with plastic wrap, for 6 hours or up to 2 days in advance of serving.
When ready to serve, heat the mixed berries in a saucepan set to low heat and break up with a spoon or a fork. When most of its excess water has evaporated, turn off the heat and spoon the berry mixture over each panna cotta.
Serve between 6, storing any leftovers in the fridge in an airtight container for up to 1 week.
