Mixed Berry Pudding Cake (RK Product)

Ingredients:

½ cup mixed berries such as blueberries, blackberries & raspberries 

½ cup almond flour 

¼ teaspoon fine sea salt

½ teaspoon baking powder

¼ cup Keto monk fruit granulated sweetener

1 packet of Real Ketones Caffeinated Mixed Berry D-BHB powder

2 large eggs

½ cup heavy whipping cream

½ cup purified water 

1 teaspoon pure vanilla extract 


1 tablespoon powdered Keto confectioners’ sweetener for dusting 


Instructions:


Preheat the oven to 400 F (205 C). 


Grease a 6x6” oven-safe baking dish with oil. Arrange mixed berries in this dish. Set aside.


Mix the almond flour, fine sea salt, baking powder, Keto monk fruit granulated sweetener, and Real Ketones Caffeinated Mixed Berry D-BHB powder in a large mixing bowl. 


Mix the eggs, heavy whipping cream, purified water, and pure vanilla extract in a separate mixing bowl until well-combined. 

Pour the batter over the berries and bake in the oven until golden and cooked through (a toothpick pierced in the center of the bread will come out clean), about 25-30 minutes). If the top of the bread begins to get dark before the middle of the loaf is set, cover it with foil as it finishes baking. 


Remove from the oven and allow to cool. When it is cool, dust with Keto confectioners’ sugar. 


Slice and serve between 6, storing any leftovers in an airtight container on the countertop for up to 3 days.
