2 tablespoons avocado oil
2 teaspoons sea salt
1 teaspoon black pepper
1 teaspoon garlic powder
4 ounces of grated parmesan cheese
Preheat the oven to 400 F (205 C).
Add avocado oil, sea salt, black pepper and garlic powder to a mixing bowl and whisk together.
Add sliced yellow squash and toss in the avocado mixture until it is fully coated.
Arrange on a baking tray lined with parchment paper.
Sprinkle grated parmesan cheese over each slice of squash.
Roast in the oven for 20 minutes, or until it is soft and has browned.
Remove from the oven and serve, storing any leftovers in an airtight container in the fridge for up to 5 days.
