Sandwiches are on the menu! These Pesto Chicken Salad Sandwiches are sure to be a crowd-pleaser, we recommend making a big batch to serve to loved ones.

½ pound of cooked boneless & skinless chicken breast, shredded
1 cup baby spinach, chopped
10 cherry tomatoes, quartered
1 batch of Pesto (see below)
2 cups fresh basil leaves
Juice and zest from ½ medium lemon
1 teaspoon sea salt
1 medium garlic clove
½ cup pine nuts
¼ cup grated parmesan cheese
¼ cup olive oil
Pulse all ingredients in a food processor until creamy and well-combined.
Quick Keto Microwave Bread (see below, makes 2 slices of bread)
2 tablespoons butter or ghee, melted
2 large eggs
½ teaspoon raw apple cider vinegar
2 teaspoons plain & unsweetened almond milk
2 tablespoons coconut flour
¼ teaspoon baking soda
Mix all ingredients together. Pour ½ of the batter into a bread-sized microwave dish and microwave for 1.5 minutes. Check to see that the batter has formed into bread. If it’s not cooked all the way through, continue microwaving for 15 seconds at a time until it is done. Remove from the microwave and flip the dish upside down to pop out the bread. Continue with the remaining half of the batter to make 2 slices of bread.

Toss the cooked and shredded chicken breast with the baby spinach, cherry tomatoes, and pesto.
