Ingredients:

Pork Chop:
2 tablespoons avocado oil
½ medium yellow onion, peeled & chopped
2 teaspoons sea salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon ground cumin
1 tablespoon apple cider vinegar
1 pound of chopped pork chop
½ cup green salsa
1 cup chicken stock
Garnishes:
Zest from ½ fresh lemon
2 tablespoons fresh cilantro, minced
1 whole scallion, minced

Instructions:

Add all pork chop ingredients to an electric pressure cooker, stir together well, and set to cook on the “Meat” option for 20 minutes with the steam valve sealed.

Once it has reached pressure and cooked for 20 minutes, allow the steam to naturally release for 20 minutes before opening the lid.

Open the lid and stir together well and add garnishes.

Serve between 4, storing any leftovers in the fridge for up to 3 days.
