Pumpkin Spice Pancakes

Fall is in the air and we are tasting its flavor on our plates with these Pumpkin Spice Pancakes! Unlike traditional pancakes made with all-purpose flour, our cakes are made with healthy proteins and fats so these will keep you full for hours without that uncomfortable crash!

Cooking Time: 15 minutes

1 cup almond flour
4 large eggs
½ cup pumpkin puree
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
2 tablespoons erythritol
1 tablespoon butter
4 tablespoons plain cream cheese
4 tablespoons pumpkin puree
1 teaspoon pumpkin pie spice
8 tablespoons keto maple syrup
4 tablespoons chopped walnuts


Mix all pancake ingredients except butter together very well until smooth and creamy.

Heat a skillet to medium heat and melt butter in it, swirling the pan around so that the whole skillet is coated.

Pour silver dollar size dollops of pancake batter into the hot pan and allow the first side to cook through, about 1-2 minutes, then flip and continue to cook for another minute. Remove from the skillet and continue with the rest of the batter.

Mix cream cheese, pumpkin puree and pumpkin pie spice together very well and set aside.

Serve pancakes immediately with spiced cream cheese, keto maple syrup and chopped walnuts.
