This baked to perfection skillet will blow your mind and taste buds, from its roasted red peppers all the way to its toasted franks! We promise this will end up being a weekly recipe for you.

1 tablespoon coconut oil
6 beef hot dogs, sliced in ½” bites
2 garlic cloves, minced
2 cups chopped cauliflower
1 medium yellow onion, peeled and sliced
1 large red bell pepper, seeded and sliced
1 teaspoon of sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon dried red pepper flakes
Cilantro for garnishing
Preheat oven to 350 degrees Fahrenheit.
Line a baking tray with foil and parchment paper and layer with all ingredients except coconut oil and cilantro.
Toss all ingredients in the pan with coconut oil (melt to make this easier) and bake until everything is soft and has browned, about 25 minutes, tossing after 15 minutes.
Remove from the oven and serve between 3 people and store any leftovers not eaten in a glass container in the fridge for up to 3 days.
