Raspberry Lemonade Bars

Makes 12 


This treat is perfectly sweet with a tart finish, thanks to fresh raspberries. Make this in advance to serve at a holiday gathering or to celebrate after a sports game, they are sure to be a big winner for all of the sweet tooths! 

 

Prep Time: 10 minutes

Cooking Time: 40 minutes  

 

Ingredients:

Crust:

1 ¾ cups almond flour

4 tablespoons butter, melted

2 packets of Real Ketones Lemon Twist Weight Loss Sticks

2 tablespoons Keto-friendly granular sugar sweetener such as Swerve  

Raspberry Lemonade Filling

2 large eggs

1 packet of Real Ketones Lemon Twist Weight Loss Sticks 

2 tablespoons fresh lemon juice

Zest from ½ fresh lemon 

¼ cup fresh raspberries, chopped

Raspberry Topping:

2 tablespoons sugar-free raspberry jam


Instructions:


Preheat your oven to 350 F (177 C) Pulse crust ingredients in a food processor until a dough has formed. Press it into a 5x5” square baking dish lined with parchment paper so that it is even and packed in firmly.


Bake in the oven for 20 minutes. The top will be golden in color. Remove from the oven and set aside to cool completely.  


While the crust is cooling, mix all of the raspberry filling ingredients together, except raspberries, and pour on top of the cooled crust. Carefully arrange chopped raspberries in the egg mixture so that they are distributed evenly. 


Return to the oven (350 F or 177 C) and bake for 20 more minutes. 


Remove from the oven and let it cool in the fridge. When completely cooked, spread sugar-free jam on the top.


Slice into 12 squares and store leftovers in an airtight container in the fridge for up to 1 week.
