We love how tasty and easy this plate is to prepare. Use this as a go-to lunch or set it out at your next social gathering, either way, it’s sure to become a favorite. Charring your peppers will bring out their natural sweet flavor, but to prep this even faster, a jar of pre-roasted peppers works just fine.
Prep Time: 5 minutes
Cooking Time: 10 minutes if charring peppers
4 ounces of sliced roast beef, rolled up
1 cup of micro greens
½ of a medium avocado, sliced
6 mini peppers, charred or raw
1 ounce of extra sharp cheddar cheese
1 tablespoon olive oil
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon apple cider vinegar
1 teaspoon yellow mustard
If charring peppers, place on a baking sheet and roast under the broiler until they begin to blister, about 5 minutes per side.
Whisk vinaigrette ingredients together and store in a glass container until ready to use.
Arrange rolled pieces of roast beef, mini peppers, cheddar cheese, and micro greens topped with avocado on a plate.
When ready to serve, shake vinaigrette well and drizzle over your plate.
