Salami & Goat Cheese Frittata

1 tablespoon ghee or butter
8 eggs
1 teaspoon sea salt
½ teaspoon black pepper
2 cups baby spinach
2 ounces of peppered salami slices
4 ounces of soft goat cheese, crumbled


Preheat oven to 350 degrees Fahrenheit.

Line an 8x8” cake or tart pan with parchment paper.
Whisk eggs in a bowl and season with sea salt and pepper.
Pour into your pan and with your hands, press in baby spinach.
Top with sliced salami.
Bake in the oven until the eggs have set, about 20 minutes.
Remove from the oven and garnish with crumbled goat cheese and allow to cool a few minutes before serving, storing any leftovers in the fridge for up to 3 days.
