Salami & Goat Cheese Frittata

Got some salami and cheese in your fridge? Why not add it to a baked egg dish like this recipe for Salami & Goat Cheese Frittata? Peppered salami and creamy sweet goat cheese pair perfectly in this high fat dish that you can enjoy for breakfast, lunch or dinner, so dig in!

Cooking Time: 30 minutes

Ingredients:
1 tablespoon ghee or butter
8 eggs
1 teaspoon sea salt
½ teaspoon black pepper
2 cups baby spinach
2 ounces of peppered salami slices
4 ounces of soft goat cheese, crumbled


Instructions:


Preheat oven to 350 degrees Fahrenheit.

Line an 8x8” cake or tart pan with parchment paper.
Whisk eggs in a bowl and season with sea salt and pepper.
Pour into your pan and with your hands, press in baby spinach.
Top with sliced salami.
Bake in the oven until the eggs have set, about 20 minutes.
Remove from the oven and garnish with crumbled goat cheese and allow to cool a few minutes before serving, storing any leftovers in the fridge for up to 3 days.
