This dip is amazing! We keep our chips around so that we can dunk them in the ultra-cheesy dip made with sausage, fire-roasted tomatoes and three different cheeses, yum!
Prep Time: 5 minutes
Cooking Time: 30 minutes
1 pound of breakfast sausage
1 medium yellow onion, peeled & minced
2 garlic cloves, peeled & minced
1 14.5-ounce can of fire-roasted diced tomatoes, drained
1 teaspoons sea salt
½ teaspoon black pepper
2 cups full-fat sour cream
4 tablespoons plain cream cheese
1 cup shredded cheddar cheese
Toppings: ¼ cup shredded cheddar cheese
1 whole scallion, minced
Serve with: 2 bags of Real Ketones Sweet BBQ Chips
Preheat oven to 350 degrees Fahrenheit.
Brown sausage in a cast-iron skillet or skillet and break up with a wooden spoon as it cooks, about 10 minutes.
When cooked through, add in minced onion and garlic and continue to sauté with the sausage, about 5 minutes, or until soft.
Add in canned tomatoes, sea salt, black pepper and continue to stir and let simmer until thickened a bit, about 5 minutes.
Turn heat down to low and stir in sour cream, cream cheese and shredded cheese.
Top with additional shredded cheese and transfer to the oven and allow to heat until the topping is all melted and bubbly, about 10 minutes.
Remove from the oven and garnish with minced scallion.
Serve warm with Real Ketones Sweet BBQ chips.
Store any leftovers in a glass container in the fridge for up to 3 days.
