Sausage & Veggie Bake

Serves 4

Get dinner on the table fast with this recipe for Sausage & Veggie Bake! Just slice and dice it all up and toss with healthy fats and seasonings before sticking in the oven for a truly satisfying meal!

Cooking Time: 30 minutes

Ingredients:

4 4-ounce pork sausages, sliced
2 garlic cloves, peeled & minced
1 medium red bell pepper, seeded & sliced
4 cups green or red cabbage (or both), chopped
4 tablespoons butter
4 tablespoons olive oil
2 teaspoons sea salt
1 teaspoon black pepper
1 tablespoon dried mushroom powder
Garnishes:
1 whole scallion, raw

Instructions:

Preheat oven to 400 degrees Fahrenheit.

Arrange sausage slices, garlic, red bell pepper and cabbage on a baking tray lined with parchment paper.

Sprinkle butter on top of everything and drizzle olive oil over everything. Season tray with sea salt, black pepper and dried mushroom powder.

Bake for 30 minutes.

Remove from the oven and serve beween 4 with minced scallion.
