Sloppy Joes with Keto Buns

Serves 4

We took a classic recipe and made it Keto-friendly and we’re loving every bite! Hearty beef cooked in red sauce and cheese is stuffed between soft and perfectly golden buns, get ready for your new favorite meal, these are so good!

Cooking Time: 20 minutes

Ingredients:

Sloppy Joe Filling:
1 tablespoon butter
1 medium yellow onion, peeled & minced
1 pound of ground beef
2 cups keto-friendly marinara sauce
1 tablespoon coconut aminos
1 teaspoon sea salt
½ teaspoon cracked black pepper
1 teaspoon garlic powder
1 teaspoon dried oregano
1 cup of riced cauliflower
1 cup shredded extra sharp cheddar cheese
Keto Buns:
3 large eggs
2 cups shredded sharp cheddar cheese
4 tablespoons mascarpone cheese
1 ½ cups almond flour
1 tablespoon baking powder
1 teaspoon sea salt
1 tablespoon sesame seeds

Instructions:

Preheat your oven to 400 degrees Fahrenheit.

To make the keto buns, melt shredded cheese and mascarpone cheese in a microwave-safe bowl and stir very well to combine.

Mix 2 eggs, almond flour, baking powder and sea salt in a large mixing bowl, making sure there are no clumps.

Pour in melted cheese and stir well to combine.

Form 4 balls with your hands and place on a baking sheet lined with parchment paper. Flatten a bit with your hand.

Sprinkle sesame seeds on each bun.

Bake in the oven for 10 minutes, then brush the tops of the buns with the remaining egg, then bake 10 more minutes. Remove from the oven and allow to cool for a few minutes before slicing in half and filling the sloppy joe mixture.

To make the filling, add butter to a large skillet and bring to medium-low heat.

Add minced onion to the skillet and sauté until it begins to soften, about 5 minutes.

Add ground beef to the skillet and break up very well with a wood spoon. Sauté until browned, about 10 minutes.

Add marinara sauce and stir well to combine. Season with coconut aminos, sea salt, black pepper, garlic powder and dried oregano.
Stir in cauliflower rice and continue to sauté until the rice is soft, about 5 minutes.

Stir in shredded cheese and turn off the heat.

Serve between keto buns, with optional additional shredded cheese.

Storing any leftovers in the fridge for up to 3 days.
