Slow-Cooker Salsa Pork Chops

Serves 4

It doesn’t get easier than this recipe for slow-cooker salsa pork chops. Just combine all of the ingredients in your slow-cooker and set it on low and do your thing until your house smells amazing and your belly in ready to eat! This is wonderful on its own and delicious with some sliced avocado.

Prep Time: 5 minutes
Baking Time: 4-6 hours

Ingredients:

4 tablespoons olive oil
1 cup chicken stock
1 medium yellow onion, peeled & sliced
1 yellow bell pepper, seeded & sliced
6 ounces of boneless pork chops, diced
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon ground cumin
¼ cup fresh cilantro, chopped

Instructions:

Place all ingredients except cilantro in a slow-cooker and gently combine.

Secure the lid and cook on low heat for 4-6 hours.

Turn off the slow-cooker.

Serve between 4 with fresh cilantro, storing any leftovers in an airtight container for up to 3 days.
