We used our recipe for Smoked Turkey & Cheddar Roll Ups to create a beautiful crisp salad! When you’re hungry and in a hurry, grab some pre-made roll ups, slice, and layer a bed of greens, we know you’re going to love this routine!

6 slices of deli smoked turkey
6 pieces of pre-sliced sharp cheddar cheese
½ red bell pepper, seeded and sliced
2 tablespoons mayonnaise
1 teaspoon sea salt
½ teaspoon cracked black pepper
Several sprigs of parsley
2 tablespoons olive oil
1 tablespoon apple cider vinegar
½ teaspoon sea salt
¼ teaspoon black pepper
¼ teaspoon garlic powder
4 cups baby kale
2 baby bok choy, chopped
½ red bell pepper, seeded and diced
Place smoked turkey slices on a large cutting board or tray. Arrange cheese slices, red bell pepper slices, 1 teaspoon each of mayonnaise, a sprig of parsley and sea salt and black pepper on each slice of turkey.
Carefully roll, placing gently pressure on each roll to keep them from unraveling.
Toss all salad ingredients together and add a bowl. Top salad with 2-3 roll ups that have been sliced like pinwheels, each.
