What are the holidays without some sugar cookies! Our recipe will give you the sweetness you love to enjoy this time of year without the crash from sugar and carbs. Many health food stores and online markets sell natural food colorings and sprinkles, so be sure to check into them out this season!

Ingredients:
Sugar Cookies:
6 tablespoons butter
1/3 cup Swerve confectioners’ sugar replacement
1 teaspoon pure vanilla extract
1 cup almond flour
1/3 cup coconut flour
¼ teaspoon baking powder
Cream Cheese Butter Frosting:
6 tablespoons butter
1 ½ tablespoons heavy whipping cream
1 ½ teaspoons pure vanilla extract
2/3 cup Swerve confectioners’ sugar replacement
Instructions:
Preheat your oven to 350 degrees Fahrenheit.
Pulse all sugar cookie ingredients together in a food processor until fully combined.
With your hands, form into a log shape and wrap in parchment paper. Stick in the freezer for at least 15 minutes to allow the dough to become cold and firm.
After at least 15 minutes, remove from the freezer, unwrap, and carefully slice in 12 round discs. Set on a baking tray lined with parchment paper with at least a couple of inches in between each cookie.
Bake in the oven for 8 minutes, checking after 6 minutes to ensure there is no burning.
While cookies are baking, prepare your frosting by blending until very creamy in a food processor or with a hand mixer. If using food coloring, divide frosting 3 ways (or as many colors as you are using) and add color drops to each bowl and stir well until your desired color is created.
Remove cookies from the oven (they will be very delicate until they have cooled completely. When completely cool frost and garnish with any sprinkles or additional decorations.
Serve between 12, storing any leftovers in an airtight container for up to 7 days.
