Ingredients:
4 tablespoons ghee or butter
8 ounces of wild-caught shrimp, tail on
1 teaspoon sea salt
½ teaspoon garlic powder
4 ounces of sun-dried tomatoes, packed in oil
2 cups baby spinach
¼ cup fresh basil leaves, chopped
Instructions:
Heat ghee or butter in a medium skillet to medium-low heat.
When melted, add shrimp and toss with sea salt and garlic powder.
When the shrimp is pink in color, toss in sun-dried tomatoes, baby spinach and chopped basil.
Sauté until the greens have wilted.
Serve immediately, storing any leftovers for up to 2 days in the fridge.
