This recipe for “cookie dough” will satisfy your sweet tooth and give you a dose of healthy fats, keeping you satisfied and fuller, longer. We used sunflower seed butter, but feel free to try peanut or almond butter, as well!
Prep Time: 5 minutes
Cooking Time: 2 hours to chill in the freezer
½ cup sunflower seed butter
1 tablespoon ghee
2 tablespoons coconut butter
¼ teaspoon sea salt
¼ teaspoon vanilla bean powder
1 teaspoon ground cinnamon
1/3 cup xylitol or another low-carb sweetener
4 tablespoons stevia-sweetened chocolate chips
Combine sunflower seed butter, ghee and coconut butter in a bowl and heat in the microwave until melted, about 30 seconds.
Stir together with the remaining ingredients until well combined.
Spread in an even layer on a baking sheet lined with parchment paper and chill in the freezer for about 2 hours.
When ready to serve, sprinkle with additional sea salt, if desired.
